This. I was frustrated using stainless steel because everything would stick until I learned those two steps. Now I have a couple of All Clad skillets that are amazeballs to cook in and nothing sticks! I also second the Barkeeper’s Friend. It makes your stainless look brand spanking new.

Well said. I used to put mine in the dishwasher, but they developed sharp edges (it's a whole thing). All Clad replaced every single pot and pan with no question asked. I only wash them by hand now. Stanley bottle rusty after 1 month
So, stainless steel can still rust in certain situations. The most relevant for your case are probably going to be pitting corrosion, crevice corrosion, and stress corrosion cracking. ...basically, under certain circumstances local conditions (ie., within a small divot in the surface) can be such that corrosion cannot be stopped by the chromium, because the local electrochemistry is sufficiently "wrong" (so to speak; basically the local chromium becomes less than 12%). The other major option is ferrous contamination during fabrication -- if stainless steel is allowed to contact regular steel, ferrous particles can get embedded in the surface and set up a rusting reaction that the local electrochemistry can't stop (the chromium oxide can't form; see the pitting/crevice corrosion mentioned above). I kinda feel like your case is either ferrous contamination during fabrication OR ferrous contamination in use -- what's the iron content of your water? If your water line is rusty, iron particles can get on the stainless and start the corrosion process. Oxalic acid (commonly available in Barkeepers Friend products) should fix it, but do be aware that the amount of rust shown will be largely irrelevant for your usage. Iron oxide is very nearly harmless ("no harmful effects known other than those associated with suspended inert solids in water").

Baking sheets that don’t end up like this?
this is what a used baking sheet looks like. This is perfect. It should look like this. That said, if you, like me, would prefer that it doesn’t look like this, there is a solution. - light dusting of bon ami or barkeeper’s friend - a drop or two of dish soap - scrub with a damp sponge (not too wet, or all the bon ami will rinse away before it can work) I have brought shine back to uncleanable bakeware with this method. just note that the longer you scrub the bottom of your baking sheet, the more you will warp it. This cleaning method will not scratch it, but you are slowly stretching the metal on the bottom with each scrub. So the bottom will round slightly after a few years of making sure your baking sheets are always shiny. Up to you to decide if it’s worth it for you.

How to clean grease stains from my tri-ply stainless pans? I have used bar keepers friend and left on overnight but stains still won’t budge!
I've had to deal with this and the easiest is to use the extra extra fine brillo steel wool. Plus bar keepers friend which is an acid , so you cannot leave it on too long!! It will corrode the finish.

You don’t need to use metal and there sure as shit isn’t a buy it for life version of a basic cleaning product. You need a sponge (preferably a scrub daddy they are amazing) and some bar keepers friend. That will remove anything and will have your pans looking as good as the day you bought them

It does not further scratch the surface but instead lifts the metal left behind from utensils. As always, spot test first. But you’d be amazed what liquid bkf (famously less abrasive than the powder) can do to polish up a ceramic

What’s one product you bought that has lasted forever and was totally worth it?
I've got a pretty decent selection of Demeyere 5-ply and 7-ply pans. Half of them second-hand for peanuts. Most of the time they arrive looking a little ratty but with 15 minutes of cleaning and polishing using a stainless steel cleaner like the Demeyere or Bar Keepers Friend they look like new again.

What brand / type of pots & pans are worth investing in as a young adult?
This. I have used my Calphalon pots and my Lodge skillet regularly for 20-25 years now and all of the pieces look new. I’d recommend Calphalon tri-ply in either a small set or just get a 3-3.5 qt. pot (for pasta or to hold a steamer basket) and a 1qt pot (I use this all the time for reheating soup, melting butter for popcorn, etc,), a 10” Lodge skillet, and an 8” or 10” T-Fal non stick pan (for eggs, etc.). It is helpful to find a casserole dish that you like as well, HIC makes nice ones that are inexpensive and often rated for broiler use. Also, pick up a container of Barkeeper’s Friend powder to keep the Calphalon shiny and beautiful.

Enameled cast iron question
All that you mentioned, don’t use anything more abrasive than astonish paste and try to just repeatedly use soap, time (soaking) and water first. We hand wash and dry. Barkeepers friend is too abrasive, astonish paste is the last resort. My wife has a few recipes where she sears in the pot, it makes a mess- but a silicon scraper with hot water really will eventually get it all out 90% 0f the time.

I've been buying one piece at a time eventually replacing all my kitchen cookware. It has been a buy it for life experience for me. It is ADHD/ ASD friendly too. I can't tell you how many times I've cooked something that utterly sticks like glue, burned to the bottom of my pan and left for days before getting washed. I just soak in hot water and am able to just pore out everything after 10 minutes. No need to scrub. Bar keepers friend is the best cleaner to use for a pan of such caliber. Literally takes off all the built up grease stains with ease and makes it look brand new and shiny again. What a steal and gem you found. I'm so excited for your new addition.

Stainless steel cookware recommendations?
I have reveres and they are amazing. I don't think they are in business anymore, but if you come across them thrifting etc., maybe grab it. I've had mine for 7 years and I'm pretty sure they will last forever. I use Barkeepers Friend to scrub them and they shine like new everytime.
