Sure, that is a valid take. Its not for me as I'd rather have a boardsmith for a lifetime than spend $50 every couple of years, but I get not wanting to deal with the weight and maintenance. Where I am disagreeing is the "their purpose is to protect the knife." Nothing beats a quality end grain board in this regard. If you don't mind sharpening it more often then a cheaper board works, but in addition to the long-term cost I think you're just shunting maintenance from your cutting board to your blade(s).

Boos block, Brooklyn Boards, and boardsmith are great big brands for hardwood cutting boards Sometimes you can find a local woodsmith for cheaper I've also seen people go the cheap route and just buy a piece of wood from the hardware store. Sand and rub down with mineral oil.

Sure thing! IIRC (and this was pretty much exactly 4 years ago) I picked walnut because I liked the way it looked. I also got a smaller maple cutting board from Brooklyn Butcher Blocks around the same time (and don’t recommend). The walnut shows some knife marks, but I’m prob not the right judge of that. I see knife marks as patina and I don’t really notice them. That said, the knife marks on the maple board are much more noticeable. Important difference: the Boardsmith board is significantly better, and is end grain where the maple board is long grain. I did get the feet and would not have it any other way. No, I can’t flip it (I could I guess but I don’t). The feet give it a touch more height but also keep it pretty securely in place. Every footless board I have benefits from the wet paper towel trick or spare drawer liner to keep them from sliding around. That gets worse if they warp at all. But with the feet, it stays put. Thursday I cut up a whole watermelon on it. That watermelon juice that gets on the counter doesn’t make the board slip because the board is a half inch above it. I do think it would feel weird with the feet pointing up. Plus, you would lose that non-slip factor.
