I never want to buy cookware again
I don't work there, but sur la table is having good sale right now. I got a Cristel skillet last spring that is an excellent piece of stainless steel.

Healthy but easy-to-use/maintain Pans to replace non-stick (for my cooking style) ?
Why not a mix between alu/carbon steel and titanium non stick depending on your usage? Lagostina Tempra Mineral (made in France) Maaaybe Tefal Titanium 6x (made in France) Other brands have "titanium" stuffs. And for roasting, true BIFL: Cristel: inox with removable handles and goes to dishwasher. De Buyer Carbon steel. Just make sure to season them if needed the first time, then enjoy. In any case skip the made in China and cheap brands. There's non-stick and there's non-stick.

Most reliable European brands for stainless steel kitchenware (pans)?
Would say De Buyer, Cristel, and lastly Tefal

Europeans, what cookware brands do you use?
I love the Cristel brand, they have incredible pots and pans (with removable handles) and offer lifetime warranty. My parents have been using theirs for decades and they're good as new. They also make utensils but I am less familiar with them

A list of BIFL not made in the USA
Cristel is another french cookware maker that are actually BIFL albeit still on the pricey side. But they make great non-stick pan without teflon coating (full stainless steel, like professional kitchen cookware) and they can actually redo the non-stick finish for your pans when they lose their *non-stickiness*

What brand / type of pots & pans are worth investing in as a young adult?
Cristel all the way. I've had mine for 40 years and my parents had them before me. I'm a terrible cook. I've burned and scrubbed just about every conceivable thing off them (including plastic) and they're still going strong. They have a detachable handle too which is super handy for storage. And they're actually pretty great to cook with, they're not *just* indestructible. Anything that has a non-stick layer you'll have to replace unless you take really, really good care of it. Non stick is great, but if you are an idiot like me the extra scrubbing and cooking with a bit more oil is fine. Also worth noting I only got them from my parents because they switched from gas to induction... So they then bought the induction Cristal set.
