Is there anything you're convinced is "the cheaper the better"?
Yeah, personal use? Defender + common sense and "hand washing" is good enough for me. But when I'm managing corp networks I at least make sure there is are dedicated HIPS/EDR agents because you know, liabilities and all that.

Is there anything you're convinced is "the cheaper the better"?
Ever since they bundled Defender with Windows 10, it's been hard to convince me that I need anything more. If you have the paid business or enterprise version even more so. But my security guy still insists we need something else, so Defender runs in passive mode in our environment. I have yet to see anything that his suite catches that Defender didn't also see.

How durable and protective is the Spigen Tough Armor case?
I'd go Defender on that one. My last job was at a concrete manufacturing plant and had no issues with my Pixel 5 in a Defender case. I currently have a Spigen Tough Armor on my Pixel 8 Pro, the case doesn't have a cover for the charging port. But I also work a desk job now in a climate controlled office, so can't personally speak to how it would hold up.

Best dehumidifier to humid and moldy environment?
145 Pint Commercial Dehumidifier with Drain Hose for Crawlspace & Basement | Defender M145 Just copied that from my purchase confirmation. It was $489 all in. Only thing I wish it had is a filter warning so I know exactly when it needs to be cleaned. That's the only thing it requires from me. I also bought a tiny humidity and temp thermometer that sits on top of it and it correlates really closely except for when the dehumidifier turns off. It only displays completely accurate info while it's running. I wish I'd made this purchase years ago instead of buying disposables from Medea and Toshiba and Honeywell. For reference my basement area is about 500 ft with an open stairway at one end. No problem keeping it bone dry with it set in the mid to high 40s. It's off half of the year when my gas boiler is keeping the basement warm and dry.
