Tragedy of the Honest in a capitalistic economic system
They are ok. A set of Dexter or Victorinox will use much better steel and hold a edge better. Proof is in the pudding, I have never seen a chef use cutco, I personally can't stand their hollow ground edges. 440c stamped stainless steel is garbage.

Is there anything you're convinced is "the cheaper the better"?
You are not wrong!!! I swear by my Dexters, and I travel with them. My mom used to only own shitty knives, so I even took mine home when I’d visit.

Looking for a metal spatula that won’t bend
You probably want the plastic handle instead of wood but here's one made with plate steel to give you a feel for what to get. They make ten zillion sizes and types so chefs can get exactly what they need. Usually I peruse Amazon or a local restaurant supply store or website to find one that's got about the right blade type and size because the pricing can be totally random. If you're using iron pans get normal sizes that comfortably navigate the pan and if you are using a flattop you can get one so huge it has its own ZIP code. https://dexter1818.com/traditional-4-x-3-hamburger-turner-beveled-edge/

Brands you swear by that have Buy It For Life quality products
I'd take a $20 Dexter white plastic handled knife over a $200 Japanese pro grade knife any day. I purchased this off-brand potato ricer on Amazon for less than a Kitchen-Aide/Oxo whatever brand and got a tank of a kitchen tool. When the metal is twice as thick for commercial use it's going to last longer.

What to buy for upkeep of house as a 22M?
Make a maintenance request for stuff that's not working. That's why you rent. Don't waste money on a crap tool set that isn't going to the job if you don't know what you're doing. Buy nice tools one at a time as you need them for the job. Get a offset serrated knife like a Dexter, it'll cut most things and you won't dull the blade out and be working with a useless edge. (Cook by trade ) . Go to a restaurant supply store and buy pans from there, a half sheet tray , a WinCo half hotel pan , s rubber spatula , a WinCo pizza cutter is going to work a hell of a lot better then a cheap one from the grocery store at a reasonable price. Metal tongs / metal spatula will scratch your non sticks making them useless.

Looking for Spatula/Turner for Cast Iron (not silicone/nylon)
Yet another vote for Dexter spatulas. I have their pancake turner and the fish turned. The pancake turner has been my only general purpose turner for everything but fish for 25 years, and it still performs like day 1. Assuming the walnut handle survives, and it should, it's more of a BuyItForSeveralLives move.

Looking for Spatula/Turner for Cast Iron (not silicone/nylon)

Good affordable knives
Restaurant supplies sells knives made to be used. Most larger cities have one open to the public or online. Not the best, but NSF and can be thrown in the dishwasher. Americas Test Kitchen recommends to skip the knife block and buy the ones you actually will use. Their cookbook also has all their recommendations in the back. I bought a USA made Dexter cooks knife for under $30 that I throw in the dishwasher. It sharpens fairly quickly. Otherwise the Victorinox kitchen knives are well regarded.

Kitchen knife for personal use
> Bread knife which for many is used once every 900 years It depends. Only knives I own are a gyuto, paring, and [this](http://knives.dexter1818.com/shop/v-lo/bread-knives/v163-9sc-pcp.html) bread knife. I get a lot of use out of all 3 on a consistent basis.
