What’s your go to carving knife?
Victorinox, Lamson, Dexter Russell, any of the German makers around Solingen, or Japanese around Seki City. You probably want something like a granton edge slicer or a butcher knife profile. But check out some people using them on YT or talk with a local meat cutter for some input.

Recommendations on bread knives and opinions on Wusthof double serrated
Pro chef chef with lots of knives. Buy offset Dexter Russel serrated knife as a cheap option that can be replaced every 7 years or so as long as you don’t beat it up. If you bake or buy a lot of sour dough the wusthof double serrated is the best. The serrations are on the inside of the curve and it has the sharp points. The sharp points pierce the crust and the serrations make an amazing clean slice. Plus the tip of it is like an exacto knife so once cut through you can use the tip to slice the hard bottom crust. I bake like twenty sour dough and other breads a week. My wusthof serrated it irreplaceable. Remember no downward pressure when using a serrated knife. Minimal pressure and let the serrations do the work.

Looking to buy first quality knives.
I have a nice collection. I usually recommend the 3 basics you suggested. But honestly, I enjoy having a drawer full. I use just about all of them regularly. I have a couple Bob Kramers (the mass made versions, not 1 offs), a few Tramontinas (Wustoff knockoffs), numerous Dexter Russel sofgrips (commercial knives, I love them), a couple Asian style knives purchased off Amazon, and most recently I added 2 Spyderco paring knives (love these). My point is, buy a few from somewhere you can easily return them. Use them for a week or so snd see what feels best. If you truly are buying for life, you should enjoy them for life. Ps, also, learn to sharpen. 😁

Is there anything you're convinced is "the cheaper the better"?
Its crazy to me how much people spend on kitchen stuff in general. If some 20 dollar victorinox or dexter russel knife and a stack of deli containers is good enough for thousands of hours of prep work in a professional kitchen, its damn well good enough for me.

Second Dexter-Russell. If you want to use it on cast iron, it needs to be the flat blade variant, because it pushes the oil around in the pan and helps build up a flat and even seasoning. I’ve had [this one](https://www.amazon.com/HIC-Harold-Co-60108-Dexter-Russell/dp/B002CJNBTE) for 14 years and it’s still going strong.

What’s one thing you bought once and it’s still going strong years later?
Good cast iron, and carbon steel cookware. A good carbon steel wok can last a lifetime. A good kitchen knife...doesn't have to be fancy, a good 8 inch chef knife from F Dick, Dexter Russell, Mercer (about $10-20). Anything from Tom Bihn. The bags are very thoughtfully designed, and tougher than chrome/timbuk2 bags. A really good screwdriver. Grace screwdrivers and Bahco are my favorites...with Vessel from Japan being a new fave. Vitamix. Robocoupe...refuses to die. FWIW, a Breville food processor died on me after only 2 uses of intermittent use.

Bird & Trout Knife for life
Really, it’s just steel. Most fixed blade knives in this category should last forever if you take care of them. You could go as cheap as a little Dexter Russel filet or boning knife, or get some high end custom. Benchmade makes the Flyaway which might work for you if you can handle the price.

Mercer, Dexter-Russell and F. Dick all make great usable stuff. Victorinox tends to be a good combination of quality, value, ergonomics and availability. Most cheaper kitchen knives try to look like something more expensive at the cost of actual performance. Commercial Cutlery is meant to work, and be comfortable to the user. All go, no flash.

Kitchen knife for personal use
This comes up around here a lot. Here's something you should really think about. You can get a very high end knife(s), and it will be really nice and last a long time if you take good care of it. Seriously, some of those Shun knives come to mind, they are literally functional show pieces. You will hear a lot of people say names like Wusthof, Henckel, Shun, and these are super high quality knives. You pay for this quality not only with money, but time. You need to care of knives like this if you want them to last. You need to hand wash and dry them, you need to keep them in a nice block or on a mag strip. You probably want to invest in a good sharpening stone or be prepared to have them professionally sharpened sometimes. If you're up for this, then you can't go wrong with one of those knives. They are all awesome. On the other hand, if you expect to treat this new knife more like you treat the rest of your dishes, that is to say if you'd rather put your knife in the dishwasher, toss it in a drawer, and and sharpen it with a $10 sharpener you bought from Amazon, then you should NOT buy one of those. Instead, look for a knife that was *made* to withstand this kind of abuse. Get yourself a foodservice knife like the Victorinox Fibrox, or the Dexter-Russell Sani-Safe. They are really cheap, ultra-durable, dishwasher safe, and made to be used by people who hate their jobs. In a home setting they will last forever under circumstances that will be fatal to a high end knife. The down side is that they do not hold an edge quite as well (but not bad), they don't quite have the heft that some prefer, and they are not pieces of art worthy of display on your countertop. But they will last and perform well. That's all. Nothing wrong with a high end knife, but I hate spending extra time on taking care of gear when I don't have to. So think about that.
