Is there anything you're convinced is "the cheaper the better"?
Yes and no. Domino is a finer crystal than the generic brands I've tried. It doesn't matter for coffee, for instance, but I get better results baking with the finer crystal.

I think C&H (aka Domino on the east coast is cane sugar). I grew up in NorCal so it was always C&H. Spreckels was sugar beet sugar.

Hard disagree on white sugar. For most baking, for making KoolAid, sure any of it will work. Candy making can be very particular. For fudge or some other candy, you really need cane sugar and it needs to be finely ground for best finished texture. Either Domino, or the red bags that rural king sells are the best to use.
