Is commercial equipment generally a better investment long term?
Commercial stuff is tough, but some of the powered gear can be a lot at home, like its noisy, throws off heat, etc. I'd start with something simple like stainless tables and shelving. I swapped my island for a stainless prep table from Empura and it's been awesome for hot pans and easy cleanup. Just measure first since a lot of restaurant tables are deeper than normal counters.

Recommendation on the best gas stove brand/model?
If you want zero electronics and pure utility, don't even look at the pro-style residential brands like Wolf. You are paying for the badge. Since you are building from scratch, you can get a true commercial range like a 36-inch Empura one for like $2,000 on RestaurantSupply. It’s just cast iron grates and manual gas valves no circuit boards to fail. Just make sure you save budget for a massive hood vent, because these things put out serious heat.

I usually tell people to start with the static stuff. I swapped my kitchen island for a stainless prep table a few years ago and never looked back. You can put hot pans right on it. I grabbed a 30-inch deep table from Empura that fit the space well, but just measure carefully because standard commercial gear is deeper than home counters. The shelving and tables are definitely the gateway drug to restaurant supply stores.

This is so true. I've extended this to bigger equipment too. Stuff built for commercial use last way longer than their domestic counterparts. Recently replaced my home fridge with a stainless steel one from Empura and I love it. One major drawback is the look. A blob off stainless steel may not appeal to everyone, but I honestly don't care about aesthetics, I'd rather have more money in my pocket and a longer-living set of equipment in my kitchen tbh.

Walk-in fridge for house?
Often two commercial reach-ins are simpler and cheaper to install than a residential walk-in, you should check Empura's two- and three-door reach-ins, it gives plenty of cold storage without the build-out.
