What product would you seriously stockpile if you found out they weren't going to sell it anymore?
Dark will have a different flavor, you want the premium for similar flavor to the old Kikkoman.

I tried a couple different brands during the great Kikkoman shortage and found that I would rather eat my rice naked than use anything but Kikkoman.

I mean, the bottle you’ve used your whole life at Chinese restaurants is that bottle for a reason, but I’ve been refilling the same retail bottle of kikkoman for 3 years now and it’s perfect. I just use a butter knife to pry the plastic pour restricter out, will with a funnel from the gallon in the cabinet and put it all back together.

The [Aloha](https://alohashoyu.com/shop/shop/soy-sauce/original-blend-soy-sauce-6-oz/)- and [Kikkoman](https://kikkomanusa.com/homecooks/products/soy-sauce-non-gmo/)-style dispensers just work and last forever. There's a bit of technique for avoiding drips, but once you get it down, they just don't. They're a steal. A bottle of Aloha runs about $5.00 and Kikkoman is half that. I have a handful, at least two of which date back to the 1980s. They get used regularly and get cleaned out with soap and warm water when they hit bottom.

Do you have access to a Daiso? They have the absolute best bottles, and they're common household items in Japan so they're well-tested. But the classic Kikkoman dispenser is [beautifully designed](https://www.instagram.com/reel/DAql-cPyB3Z/?hl=en) for ease of use in 2 ways. You want a small one, though, that you'll go through quickly, because the spout allows some evaporation. At the stove, I use a bottle with a [twist top](https://www.amazon.com/BRIGHTFROM-Condiment-Squeeze-Bottles-Squirt/dp/B09FVCRK8V/), actually I recycle my sriracha bottles with twist tops for this. You can also use small twist-top bottles at the table if aesthetics aren't an issue.
