I never want to buy cookware again
Cast iron skillet, 8 or 9” (searing steaks and any other higher heat cooking) Carbon steel skillet, 10-12” sauté, pancakes, crepes, whatever 3qt all clad saucepan 6 or 8t stovetop pressure cooker (I just upgraded fagor/savor to Kuhn Rikon). That’ll do pretty much everything. I have a couple smaller skillets for melting butter or reheating things, and a second smaller saucier, but these are extra for cooking for more than 2 people.

We got a smooth edge I think Kuhn Rikon after my third grocery store one crapped out and it's good as new years later. I miss the crunch of the edge ones but they just get dull and rusty.

Healthy but easy-to-use/maintain Pans to replace non-stick (for my cooking style) ?
Retired chef here. I do 90% of my cooking with the following pans: 1) A cast iron skillet. Vintage. GLASS SMOOTH. I can easily make an omelet with this. I make crepes with this as well. I also have a bullshit pebbly-finish cheap cast iron skillet which I use for pan frying chicken. I reach for this pan more than the rest combined. 2) A carbon steel skillet. This is my egg pan. It's also my fish pan. 3) A stainless steel saucier. The only thing I do with this pan is build sauces. 4) A stainless steel stock pot. 5) A compact pasta pot. (Google Kuhn Rikon Compact Pasta Pot.) Mine is a no-name brand. And it's taller than the Rikon, which I like. This is a DANDY substitution for the massive pasta pots with baskets we used in restaurants. This takes much less energy than heating a stock pot of water just to make two servings of fusilli. 6) A carbon steel wok. (Non-stick woks make as much sense as Lead Airplanes.) Brand name doesn't matter. Quality materials and workmanship matter. Most brands have a high-end line, a consumer line, and a outlet-store line. So you can't just pick a brand and run with it.

My Kuhn Rikon garlic press. Heavy-duty machined stainless steel. Easy to clean. You can chuck entire unpeeled garlic cloves in there in a rush no problem. I had broken 3 or 4 of the cheap cast pewter ones before getting this one, and this is the last one I’ll ever need.

What sub-$10 item has genuinely lasted you years and is of regular use to you?
I bought a Kuhn Rikon serrated vegetable peeler for $5.99 in 2012 and still use it almost every day. I studied culinary and was a zealot about the Y peelers unless I tried this one just once. It does leave little tiny serrations in the vegetable, but if you are going to cook it, mash it, etc. it doesn't matter. Best peeler on the planet and it isn't even close.

Na. What you want is the Rikon Kuhn can opener. It literally just separates the top of a can from the sides. Just right off. No cutting. Do it to the bottom of a pull top can, empty and clean and then you can glue the bottom back on while hiding a gift. The can opener is the default wedding gift and always gets rave reviews.

What's one kitchen appliance you've owned for 10+ years that still works perfectly?
My Kuhn Rikon cutless can opener. One of the early models that broke the seal instead of cutting metal, but it works great. My vintage cheese wire. I may have to change the wire one day, I may not. It'll work till the casting eventually breaks.

I wish I could upvote this twice. Kuhn Rikon all the way. Very sturdy, very well designed, and very easy to clean. I had an Oxo one for years. It worked fine but it was hard to clean so there was always some dried garlic pulp in the holes. Eventually the metal started rusting so I replaced it. The Kuhn Rikon is like a 10x improvement. I know, I know, how good can a garlic press be? Well, IYKYK.

Important Kitchen Essentials?
The All Clad tools are pretty but heavy. There’s better stuff out there. Break apart kitchen shears. I have ones from Lamson. They’re not as feature rich as say the ones from Ernest Wright but they definitely break apart which I think is more important. It’s also all metal so it’ll never melt. A metal slotted offset spatula, sometimes called a fish spatula. I think it’s the best at pretty much all spatula stuff. Just make sure it’s not overly flexible, it should be on the stiff side more like a burger flipper. The one silicone thing you might want, since you wont use it much, is a silicone spatula of the scraping kind, not flipping kind. It’s great for scraping frosting, dough, pudding whatever out of a bowl. Much better than a spoon. Make sure it’s completely covered in silicone with no seams. Or you could get a wood scraper instead. Not quite as good but it’s no silicone, so there you go. All metal tongs. I have the Siri Yamagi tongs which are simple, light, and good looking. You could get longer ones from another brand but locking tongs are a little annoying, not as handy. A wood spoon. Doesn’t have to be huge. Doesn’t matter which brand. I have one from Flying Tiger for $2. It’s over 10 years old. All I did was sand it once when I first got it. An edgeless can opener or it’s called a safety can opener. I have one from Kuhn Rikon. The one I have is all about cans, but they have versions with extra features. A microplane for grating. The one All Clad tool I have are the measuring spoons. They’re pretty and the weight isn’t a turn off, just makes me think they’ll last forever. For measuring cups I have Oxo, and they have really good features but I don’t think they’ll last forever. I’ve had them a long time though, maybe 10-15 years. If they last another 10 I’ll be happy, but I could see it being 20.

Idk anything about this one but we have two in our house (one I keep at work). Oxo (that’s the one I keep at work) and one that is made by Kuhn Rikon and it looks like a bunny. Both are great and we’ve had them for years. I don’t think they make the bunny one anymore, but you can find it on eBay. It’s a neat design because instead of twisting the knob, there’s a level that goes up and down. My husband had some wrist issues from carpal tunnel and that can opener was the only one that worked for him.

I’m using a [KUHN RIKON 22329](https://youtu.be/Ttte2BEnS0I) and imho it has the big advantage that there is no need to squeeze or apply pressure. In effect that’s contributing to its longevity.
