I never want to buy cookware again
Ok this is what I have - Cuisinart stainless steel set - 2 skillet sized pans, 2 large 12" pans with lids, 2 medium pots, one small saucepot, one large soup pot. Cast iron pans - one 10" workhorse and one cast iron grill pan, plus one cast iron tortilla pan. 1x 10" carbon steel pan - I ended up getting a Merten & Storck which isn't the fanciest brand but I love it. It is also a workhorse and extremely well-made. The above should last a lifetime, they have been getting used an abused by myself and several room mates for years and are no worse for the wear.

I never want to buy cookware again
Stainless steel and carbon steel are solid. I tried both, found I prefer cooking with carbon steel. I’ve ordered an 8” skillet, a 12” wok/sautee pan combo and a grill pan, and they have been super solid and sturdy, no issues with design or quality. [Merten & Storck](https://www.amazon.com/stores/MertenStorck/page/B93DA6B5-B9CE-44AB-8FBD-5CC984403EF0?lp_asin=B0C638Q256&ref_=cm_sw_r_apin_ast_store_9E2J9V9VQY0DGQZK84C3&store_ref=bl_ast_dp_brandLogo_sto) was the maker. I’ve had the oldest one for about 3 years now and aside from the way it looks after seasoning, it’s good as new. I doubt I’ll need to replace it within the next decade+

What was the best purchase you made this year?
I bought the Merton and stork preseason carbon steel 8-in frying pan skillet. I thoroughly cleaned it and reseed it. A seasoned it twice and cooked in it 5 days in a row and it's performing beautifully.

What's a purchase under $50 that has genuinely improved your daily routine?
The one I bought I just looked up and it is now $95. But there are other options out there, like Merten & Storck Pre-Seasoned Carbon Steel 10” Frying Pan Skillet on Amazon, which is $49

What’s the pan everyone needs that’s BIFL?
Forget every response that isn’t recommending carbon steel. Not just any carbon steel. It must be a smooth polished carbon steel pan, well seasoned, not too thick. Do NOT get a Lodge carbon steel pan, they’re just glorified rough cast iron. Mauviel, deBuyer, or my new cheap fav Merten & Storck. I had no idea what I was missing. I thought you could only cook eggs in a teflon or ceramic non stick, but nope, it is significantly _more_ nonstick in a seasoned carbon steel pan. It’s not just adequate, it’s way better. Carbon steel is the real non-stick. Everything else is just big teflon trying to corner the market.
