Is there anything you're convinced is "the cheaper the better"?
I worked around chefs for a couple of decades, and they fell into either of two camps regarding knives in their personal lives. Some went full hog balls out obsession, spending thousands on a library of folded steel Japanese artefacts of perfection and beauty, with all the multi-graded wet sharpening stones etc. One guy I was living with even set up a forge at home and started smithing his own. Others went entirely the opposite direction, buying ultra cheap Kiwi brand blades from the Asian supermarket. They are super light, thin, and absolutely razer sharp, but after a year or two will dull a bit, and are almost impossible to sharpen due to hardness. Toss out and spend another $9.... I'm somewhere in the middle, using a heavy $40 Scanpan knife as my workhorse, which can be sharpened quite nicely every 3-4 months...

I need new induction cookware I won’t have to throw away in two years.
Cant recommend ScanPan Haptiq enough. We have induction. Nothing sticks to them, they have a lifetime warranty, are dishwasher safe, not too heavy, and my husband loves cooking with them. We first used one at a cooking class at sur la table and we’re hooked. Bought a (perfect) open box set on eBay for ~$600 and they’re still in perfect condition 5 years later despite heavy use.

Most reliable European brands for stainless steel kitchenware (pans)?
I have a Scanpan stainless steel pan, even though made in China, still very high quality. I love the craftsmanship and drip free design. However, I can't get it to be non-stick, but I can get a similar supermarket, no brand stainless steel pan to be non-stick no problem. I'm not sure it's because of my skills, but...I rarely fry anything in the scanpan. Maybe a more experienced chef can mitigate that since they're all just...steel.

Best pot and pan set for a new homeowner?
I agree with the sentiment of most here. For me stainless steel was the easiest, bought a small Scanpan 5 pce set 20yrs ago that works as well today as it did then. Pretty cheap, oven safe, good quality. Bought a few extra speciality pieces since then of the same set. Also, just buy a non stick pan every so often for some things. I also recently bought a cast iron pan - I really like it, but probably not for the first up player. But it could potentially replace your non stick if you are motivated.

Best style or brand of non-stick pan that isn’t harmful?
What about Scanpan and Swiss Diamond? Are they considered safe? I wouldn't say my Scanpan was bfl, but it clearly lasted Way longer than any other non stick I've used

Scanpan would be my choice for non-stick. I don't think non-stick coating lasts forever, but I've had good luck with the Scanpan I own.

I cook a fair bit. I bought A set of scanpan pots/skillets around 2010. They are still in fantastic shape and going strong.

Don't buy Tramontina Cuisinart or other such nonstick coating pans, they are made in China. They will eventually scratch up and are too sensitive and I don't trust foodware made in China. I'm a big fan of enameled Dutch ovens made in Europe. There is a lot of stainless pan cookware made in the US. All-clad is made in the US. Lodge cast iron pans are made in the US and are extremely inexpensive - I would start there. The only thing about cast iron, is that acidic foods can't be cooked in it for long periods. If you need nonstick, Scanpan makes pans with a nonstick surface that you can use metal utensils with. They have a lifetime warranty. I recently bought a Staub enameled braiser with glass lid for $149 on sale. I use it everyday now in addition to a Staub 3.5 quart dutch oven, which I also bought on sale.

Around your age, I also thought I would be married and would have gotten some of these things as wedding gifts, and I took said "F-it' and bought nice pans, nice knives, a decent vacuum cleaner, etc. It was so worth it. I wish I had done it years earlier. FWIW I got a set of All-Clad, a ten piece and it was basically perfect. A year or two after that I added a nonstick pan from Scanpan that my brother's cooking instructor recommended - he's had his 7 years and it looks brand-new still, and I love mine to pieces.

I have had a Calphalon pan and saucepan since the early 90s, maybe commercial grade. They'd be in better shape if I'd known not to put them in the dishwasher but they're still quite serviceable. I have another 3-4qt pot since the early 00s that a got at a thrift store that's also solid. Unfortunately because they'd anodized aluminum they won't work with an induction stove, which seems to be where the future is going. Cast iron can also be a good choice if you can season it and keep the seasoning in good shape. Also can't be cleaned in the dishwasher, so we don't use those as much as we might. Ceramic/porcelain/enamel over cast iron (like Le Crueset) can also be good. We have a Scanpan which is also nice. IIRC it has an enamel lining for non stick, maybe an aluminum choose core for heat distribution in a stainless steel shell. -- Wil

Stainless pots and pans
I have the Scanpan Impact range. I find the combo of the 1.8L and 2.5L saucepan, plus the 4.8L pot/Dutch oven works for pretty much all my cooking needs. I got mine off FB marketplace in basically brand new condition. They look just as good now as when I bought them 6 years ago.

Non stick induction frying pans?
Scanpan has one of the most durable coatings. They claim that you can use metal utensils in it, but I recommend you only use plastic/wood/silicone.
