For me, it’s been Origin USA for my clothes & boots. Glock for pistols, kershaw (only the USA made ones) for pocket knife’s, wusthof for kitchen knife’s, Toyota for cars/trucks, saddleback leather for wallet/belt/briefcase/totes. Side note, Saddleback just started making boots but they are more than double the price of my tried & true OriginUSA boots. I still love my iron rangers from red wing as well so they’re a great buy.

Looking for a chefs knife
If only one knife, I'd suggest a Wüsthof either Cooks Knife (20cm) or Santoku Knife (17cm) and use a honing steel before very use. Use end-cut chopping board and "properly" sharpen it once or twice a year.

Pro chef chef with lots of knives. Buy offset Dexter Russel serrated knife as a cheap option that can be replaced every 7 years or so as long as you don’t beat it up. If you bake or buy a lot of sour dough the wusthof double serrated is the best. The serrations are on the inside of the curve and it has the sharp points. The sharp points pierce the crust and the serrations make an amazing clean slice. Plus the tip of it is like an exacto knife so once cut through you can use the tip to slice the hard bottom crust. I bake like twenty sour dough and other breads a week. My wusthof serrated it irreplaceable. Remember no downward pressure when using a serrated knife. Minimal pressure and let the serrations do the work.

I have a compete set of Wüstof Classic knives plus steak knives. Owned them since 2005. Absolutely fantastic and have yet to buy anything else. The serrated bread knife is still unbelievably sharp and a highlight to a fantastic knife set. Never had to make a warranty claim.

Bread Knife Recommendations?
I’m a knife nerd and have invested in Wusthof Ikon, Wusthof Classic, Global & Tojiro bread knives. I try to invests in the best I can afford cuz nothing like a good bread knife! But like the majority of bread knives, it is difficult to re-sharpen them at home. So I decided to design one myself specifically for sourdough bread. It’s 10” long, scalloped not serrated. I researched the spacing of the scallops to determine the perfect distance. Additionally, because of the scallops, I can resharpen when needed. But I won’t have to for a long time because we’ve made it extra sharp, +- 60 HRC. It’s very different than the typical straight bread knife, it has a slight curve to accommodate for knuckles 🤗 I tried really hard to get it just right. There’s more differences too but I don’t want to bore you. It definitely would make a beautiful gift for your wife or any one into bread! What was the BIFL upgrade that instantly exposed all your cheap versions?
Bought my first Henkel chef 4star chef knife in the mid 80’s and have added many more in various sizes up until the late 90’s. They are kept on a magnetic knife holder on my wall and are sharpened when needed. Also have a few made by wusthof. I inherited my eldest siblings Cutco kitchen shears and those are a beast.

Wusthof set we have at home is about 10 years old now. Maybe, if I remember, once a year I’ll use the sharpening rod. It’s never been professionally sharpened and cuts like a champ. Also, maybe we’re just old, but we never use the dishwasher ever for anything.

You don’t want to learn how to sharpen in good quality/nice knives as you will probably scratch them a fair bit as you learn got to maintain an angle. Check out the sharpening subreddit and truechefknives subreddit if you are interested in learning more about great knives and how to maintain them. Wustoff are great workhorses but I find they need to be sharpened way more than a great Japanese knife, but then again they are also easier to maintain.

My Wusthof Gourmet knife set. I come from A Cooking Family who is VERY specific about knife care and maintenance. No knives in the sink, NEVER in the dishwasher, keep them sharp, etc etc etc. All of them own wood handled Wusthof Classic knives. Heavy, workhorses, 40 year old knives. I truly love the knives I grew up with and consider them family heirlooms. All that being said, I got married late and refused to use beater knives before I could be gifted a set as a wedding present. So I bought myself a "cheap" set of the plastic handle variety of Wusthofs. They're perfect in every way and I refuse to upgrade to the wood handled Classics. They're light and easy to hold and comfortable. The steel is just as good as the classics, super easy to maintain, and I don't have to worry about setting them down on a wet surface for too long and making the wood crack. They still never see the dishwasher and they do not ever sit in the sink, but they're so nice for being so much cheaper than the classics. They're what I recommend to everyone looking for cooking knives.

I like Wusthof and Zwilling. I prefer the latter because their Pro line does not have bolsters which makes them easier to hone/sharpen. There are far cheaper ways to get a lifetime worthy set of steak knives, just my preference.

Lovesac sectional sofa, my Wustoff kitchen knives, my Yeti rambler. Every day. Sofa shows zero wear after 5 years. Knives are like new after 35 years, and that Yeti is perfect for smoothies, and cold or hot beverages.

Best Quality of life gift ideas under $150
I took a knife skills class at sur la table a few years ago and got to handle a bunch of different German and Japanese knives. They all feel a little different in how the grip feels on the hand, how heavy they are, etc. I settled on the Wüsthof classic ikon which feels great in my hands and a little weightier than any of the Japanese ones I tried out. I don't know if any other places let you try them out, but I'm glad I got the opportunity to do that first.

This is a good set, but I'd personally buy the knives I wanted separately vs. as a set. Check your local shops for sales! I have a restaurant supply store by me that will do 60% - 70% off during the holidays. For the brand, I've had some of my Wusthof knives for 20+ years and they are still in great shape.

Back in 2017, which the market may definitely be different now, I bought an 11 piece set of Wusthof Classic knives for my wife for only 399 on eBay. They have been incredible knives and we get them sharpened as they need it. We definitely plan to keep them for pretty much the rest of our lives. My wife (who is the cooker) does use pretty much all the knives but she easily could have gotten away with fewer. I guess I just wanted to share what a deal I got on them looking back, and that potentially you could save some money looking on eBay for them.

I did Wusthoff knives with a full tang the Ikon style. There are a few great ones. I do suggest watching some videos because how you cook and prepare food will make a difference as well. I also went to a store and held them in my hand. I wanted to get a feel for them.

I use wüsthof classic knives like for ever and they are amazing. Very charp and handy. And only need a resharp every 1-2 years for my Präferenz. But what I learned absolut myself I only need 2-3 knives. I really do all things with the 20cm chefs knives and sometimes using my 16cm santoku. And breadknive for bread for obvious reasons. But the 2 knives at the lower sided. I would not know why I need both.

I went on a similar journey a couple years back. I ended up going with a Wusthof (I believe the same chef knife as in your picture) and I've been happy with it. I didn't end up getting a set as I still had other knives I could use and don't really even use those much to be honest, except for the pairing knife. The one thing I will say is that a knife can be relatively personal so instead of "forcing" your husband into a particular set, you could consider getting him a gift card to a kitchen/knife shop and letting him try things out. The balance, weight, size, feel, style and steel used are all factors to be considered when choosing a good knife, and is chef dependent, especially if you plan on it being BIFL. So unless your husband truly knows what he wants already, you could consider get a gift card and make a date/adventure of it so he can try the knives out and ask questions of the staff (and perhaps pick up other things you might need for your newly renovated kitchen!) I'm in Vancouver and I got my Wusthof from Gourmet Warehouse. The lady I spoke with was wonderful in helping me make my decision. The other knives I tried were Global, Shun, and even some Santoku ones but I've been quite happy with my Wusthof Classic Chef's knife. Good luck on the journey!

You might want to consider convenience and availability for a mass produced knife when making your decision. r/TrueChefKnives will have a lot of knowledgable people, but keep in mind that a lot of people over there are hobbyists/enthusiasts that value rarity and specs over conveniences like warranties and customer service. Wüsthof might not be the absolute leader in quality, but their knives are good and their reputation speaks for itself. As a side note, some of the knives suggested in r/TrueChefKnives will use steel terminology the average person isn’t familiar with. Some of the steels will require disciplined maintenance and will rust if not followed. Maintenance that the receiver of a gift may not follow. I’m a hobbiest knife-maker, and I’ve made plenty of these knives for friends/family that will “cherish” them. All of them have asked me to fix rust shortly after receiving them. I’ve since switched to no-maintenance steel for gift knives

I bought a set of Wusthof knives when I started culinary school that I still have thirty years later. It looks nice in the kitchen and my wife enjoys using some of the lesser loved pieces. How serious are you and your husband about cooking? Fancy japanese knives are great and will hold an edge and stay sharp for longer, but they do have some downsides to be aware of. These knives usually use a high carbon steel which can rust or stain if you leave it in water. You must clean them immediately after every use. You should never put them in the dishwasher (generally don't put knives in dishwashers anyway). And you have to be careful not to drop them or cut anything with bones because they can break or chip. The harder a knife is, the more brittle the steel. Wusthofs are fine, but they do need to be sharpened and honed more regularly because they are a softer steel. You can buy a 600 / 1200 grit diamond sharpening stone from Amazon for pretty cheap that will do the job.

How does he sharpen his knives? That's important to know, as a fancy knife with shitty sharpening isn't worth it. Most Western knives are 20 degree blades, and most Japanese and some others are 15. I believe the Wustoff Classic Chef's knife is 14 degrees. Also, it's really important to know if he wants a 10 or 8 inch chef's knife (or other size). I second the comments saying to buy 1 really good chef's knife, and a Victorinox Fibrox bread knife and paring knife. And, find a place for a magnetic strip; 3M VHB Double-sided tape would hold it up on your quartzite back splash, since I'm sure you don't want to drill (and you can remove it cleanly when wanted).

I’ve expanded my kit over the years to include a fillet knife (I butcher wild game from time to time) and am currently looking to buy their cleaver. 9/10 would genuinely recommend their products to anyone and my only issues with the product is small feel/person preference items

Wüsthof make solid knives but they are overpriced in NA. For reference, I can buy the same set n Europe for just under 400USD or 552 CAD after tax. I recommend you don't buy a set but single knives and only add tomtze collection when you feel the need. Mist people never end up with a full set tat way and save money in the long run. Doing that will also improve your knife skills since you will get used to just using the one. So in my opinion start with a chef knife. A decent one shouldn't cost much over 120 CAD. Zwilling Pro or Wüsthof classic are both excellent choices. Also, nobody really likes knife blocks, I hear you. Mounting a magnetic strip solves that problem. Good luck with the knife hunt!

I wouldn’t. Firstly because no bread knife is BIFL since they’re so difficult to sharpen it’s cheaper to buy a new one. Similar idea for pairing knives (not hard to sharpen but you can buy cheap, sharp ones for $7 USD and once you get a few get them all sharpened at once). Get a cheaper Victorinox offset bread knife (and pairings if you choose), one very nice chef’s knife (wustof is nice, also worth going to a knife shop if possible to test different ones). You should only need 1 chef’s knife because you should be hand washing and drying a good one anyways right after use. 95% of your cutting would be done by one of those 3 so you wouldn’t really need another but if you do a lot of home butchering or cut up a lot of melons (weirdly specific but I eat a lot of cantaloupe) then something like a medium flex boning knife would be good as well (same idea as the bread knife, something cheap but nice like a victorinox)

IMO you only really need a few knives most of the time, the rest will just sit in the block. Chef's knife, paring knife, bread knife and a tomato (small serrated) knife. I would buy them all from Wüsthof personally. Wüsthof is an excellent brand, my main chef's knife is made by them and it holds its sharpness unbelievably well. I've had it for 10 years so far and it's like new.

Check out r/TrueChefKnives I am a high end Japanese kitchen knife collector(and user!). Something like Wusthof is certainly nicer than anything you pick up at a big box store and a lot of what you can buy otherwise. However, they are essentially mass produced, stamped steel blades that aren't much\* nicer than the average $30 kitchen knife. No offense to Wusthof owners! With a budget of $675 you could get a few very nice knives made by literal master craftsman that are forged rather than factory made. A nice gyuto, or kiritsuke, a petty knife, and a paring knife. Knives that would heavily outperform Wusthof, Shun, etc. The people over on the forum I mentioned would love nothing more than to assemble a list based on your budget. :) Check umm out!

Great question. A few answers - 1) Briggs and Riley carry-on. Got it in 2002 and the thing is bullet proof. Use it whenever I travel. Has a garment bag and can expand if needed. 2) Ariens snowblower. Bought it in 2000 and the thing is awesome. Still going strong 25 years later with regular maintenance. All steel not like the ones with a lot of plastic today. 3) Wustoff classic knife set. Got it as a Wedding gift in 1997. Still my wife’s favorite knives. 4) All-clad stainless steel set.ditto to #3. Love it.

Honestly, most knife sets are marketing. You’ll only use 3–4 knives regularly. I’d go with a chef’s knife, paring knife, bread knife, and maybe a utility knife if you cook a lot of veg. For German steel, Wüsthof or Zwilling are great. For the Swiss side, Victorinox Santoku knives are a solid pick: they’re light, sharp out of the box, and their Fibrox handles are non-slip even when wet. Not flashy, but practical and perfect for daily use.

What are some actual BIFL kitchen items?
My German (wusthof I think? I got just a basic set, no frills) knives and cleaver take a beating and continue to sharpen well and hold an edge. Coming into squash season again and some of those heirloom varieties I end up needing mallet to split. Cast iron and stainless steel pots and pans, and also my discount rack—15 yrs old—lodge enameled cast iron Dutch oven. My potato masher was my grandmothers that she got as a wedding present back in 1930. So is most of my Pyrex—sourced from Either from deceased family or estate sales. Essentially things without weak points where a seam or weld can give, made from durable metal or borosilicate glass will be BIFL. Just be careful with stone countertops or ceramic sinks/tile. I lost my favorite butter melting bowl to a ceramic sink in a rental we lived in a few years ago.

Wusthof and Shun make some great knives that aren't crazy expensive, but opt for one of their middle of the line series at least. I'm always using my chef knife or santoku knife and guessing those are probably the most utilized in the kitchen.

Which moment made you switch to the "buy it for life" mindset?
I couldn't fully commit because I was young and broke, but when I was in my late teens/early 20s I realized the utility of an expensive purse. Not something crazy high end designer necessarily, but I had been buying $20 purses from Target and they'd be falling apart in months. I splurged on a Coach bag for myself (I think it was about $150) after I got my first big girl paycheck, and berated myself for doing something so stupid. After that thing still looked new a year later, it clicked. For the same price (or less overall), I could have a bunch of crappy purses that fell apart, or one decent one that lasted for years and years. That big girl job was working at Williams Sonoma and I slowly learned the value of getting decent kitchen tools, too. The first time I used a good garlic press it blew my mind. This works better AND will last through nuclear war? By the time I got married at 26, I had pretty much filled my kitchen with high quality basics and when it came time to register for our wedding, we really didn't need anything. Mostly put camping gear on there. It's been 20 years since I got that job and the majority of those items (All Clad, Picardie glasses, Kitchenaid, Wusthof, etc.) are still as functional as the day I got them.

If you had to choose one item to truly buy it for life what would it be and why?
To be specific on the chef's knife, I would feel pretty decent about using a Wusthof Classic, Victorinox Fibrox, or Tojiro for the rest of my life. Just set me up with something around 8" for a chef knife, give me something around 4-5" for a paring/petty knife, and then something like a 10" bread knife, and I'm good to go. Or if I truly only get one knife, give me a CCK vegetable cleaver. You'd be surprised what you can make happen with a good Chinese sangdao cleaver.

I have had the following for years if not decades, and have never regretted the price: All Clad pans, Vitamix, Portmeirion plates and ramekins (dishwasher, fridge, freezer and oven safe; they have literally been dropped on wood floors and been totally fine), Kyocera ceramic knives, Wüstof 10 inch chef's knife, Vollrath Wear-Ever Cookie Sheet Pans, Peugeot pepper mill (solid as a rock), Kitchenaid mixer, Hamilton Beach Heavy Duty food processor, Williams Sonoma gold pans, all metal apple slicer, all-metal juicer, all metal Microplane, metal bowl set, 10 piece glass bowl set, metal whisk, set of 3 plain wooden spoons, wooden cutting boards, all silicone spatulas (handle coated as well) Basically, if you find a kitchen tool that has no plastic anywhere, and is made of good quality metal, get it. Also refer to America's Test Kitchen recommendations, as they really put kitchen tools to the test. Also, I almost hate to say it, but my Tesla Model 3 has lasted 8 years now, and my only maintenance needed has been to replace the air filter, windshield washing fluid, and tires. Also, with every SW update, the car gets better/more features. Not buy for life, but buy for a decade at least. I may not stay with Tesla in the future, but I will be staying with electric cars, for the super low cost of maintenance and acceleration alone.

Carbon steel pans. Aluminum sheet pans. If you like stainless, the all clad 2nds sales are solid for getting discounts (homecooksales). I prefer wustoff knives, but a leather strop can help keep the edge indefinitely between sharpens. I personally think le crusset bakeware is great. Other kitchen items we splurged on: breville espresso machine and toaster, vitamix immersion blender, vitamix blender, wusthof knives Mattress: big fig king mattress with adjustable base. Most comfortable bed we have ever had. Adjustable base is amazing.

Demeyere Atlantis is my favorite cookware. My favorite knives are Wusthof Classic. You really only need four kitchen knives. You need a chefs knife, a utility knife, a pairing knife and a bread knife. For stainless steel flatware JA Henckels International Lani 65 piece. For plates, bowls and dishes, I prefer square shapes. They seem to fit better, in my kitchen cabinets. I bought two four piece sets from Target. I think it cost somewhere around $100, for two sets.

Anyone keep a “BIFL Roster”?
Work jackets are tough since all clothes are a bit different and some fit better on different body types. I’ve loved my Filson jacket(s) for many years if you take care of it, it will take care of you. Bushcraft knife - Ive had and used my Dad’s Buck 192. Vanguard for at least 15 years. It’s a tank. However, I do have several winkler knives on my wish list. They’re still hand made, the quality is excellent, and the dude made all the weapons on the last of the Mohican movie. Pots and pans - can’t go wrong with All clad and Le creuset Kitchen knife’s are tough since they are a big “preference” item. But Wusthof makes excellent mass produced knives. If you’re looking for something more custom I’d research your local blacksmiths. One of my favorites is Henry Hyde. His site is Hyde handmade knives(all one word).com. His stuff is amazing and beautiful. Don’t have any griddle recs since I’ve never gotten into them. As for a bbq grill, I think the big green egg is the best you can buy with its lifetime warranty. But if it’s for the cabin and you don’t want to worry about someone making off with it. I’d say just a good old fashioned Webber kettle works just fine. Roller suitcases I don’t know: I’ve been using my goruck bag and a leather duffle from Pendleton. I love your list, my friend! Important Kitchen Essentials?
I have Wusthof Classics, and while they're not terrible, I'm not impressed. The handle scales crack around the rivets, and the knives dull quickly. They're fine, but I paid something like $1,200 between the kitchen knives, steak knives, and the knife block. I got some of the "food service" knives with the molded-on plastic handles, and they're better than the Wusthofs. I'm sure they won't last forever, but I'll plunk down another $7 to replace one whenever I manage to kill it. Now, there are some knives out there that I wouldn't give to my worst enemy. Those knives with the "micro serrations" are at the top of the list, and any ceramic knife is a close second. I'm not saying that bad knives can't be found, I think that people just delude themselves into believing that price automatically dictates quality. People also tend to overestimate what they need out of a knife. Realistically, how often do you need to slice a vegetable so thinly that it's translucent? How often are you trying to separate a hog shank from a carcass with a single chop? It's cool if you can, I guess, but even then, you can just sharpen a midrange knife and accomplish the same thing, without risking a kitchen tool that cost hundreds of dollars. For pure cutting performance, some of the best knives are the cheap, gray carbon steel knives with unfinished wood handles that they sell in Asian grocery stores. Ten dollars, and it'll cut any other commercial knife in half, without scratching the mill scale that the factory never bothered to remove. Being carbon steel, they will rust if not oiled, but they're probably tougher than the sharpening steel that came with my Wusthofs.

We’ve been married 17 years. The things we registered for, received, and STILL USE are few. But: All Clad stainless cookware. A good quality cake server (sounds sort of dumb until you host Thanksgiving or Christmas and don’t have anything to serve pie with). A good set of everyday utensils/silverware (hold them in-store, so you can get an idea of the weight and how they feel in your hand). Wusthof or Global knives- depending on your cooking habits, we find the only 4 we use are the chef’s knife, bread knife, utility, and paring. Le Creuset dutch oven. And oddly, an ugly brown heavy blanket from Pottery Barn (that we didn’t register for) has really stood the test of time and is hands down, our go-to cozy winter couch blanket.

I don't recommend knife sets. They likely will cost you more, include knives you don't end up using, and take up space on your countertop usually with a bulky block. Full set kitchen knives
I have 4 Wusthof Epicure knives that cover all of my needs. An 8” chef’s knife, the santoku, 3.5” paring knife, and the 9” slicing knife. I keep them sharp with a Worksharp sharpener and a honing steel and I’ve never had an issue. I’ve thought about getting some good steak knives but the line was discontinued. Probably the only other knives I’d get.

Piggy backing this- Weight is a big consideration! German knives like Wusthof tend to run heavier than Asian knives. A lot of brands also have different lines amongst themselves like Wusthof Gourmet: budget line, stamped knife, traditional knife handle but cheaper construction (less metal used in construction) Wusthof Classic : mid tier line, forged (not stamped) traditional knife handle with more substantial construction (more metal) Wusthof Ikon: premium line, forged, ergonomic style handle with great construction. Depending on your food prep experience, you probably have a preference for what you like to handle, you won't know unless you try to handle the knives. I thought a japanese knife would be great, but I have a greater learning curve using a lighter knife since I'm used to using heavier German knives. Also, you might prefer a smaller chef's knife if you find that the standard 8 inch doesnt cut it. Some brands will carry a 7 inch chefs You do not need a whole knife set, a chefs knife, bread knife and paring knife will take you a long way. Build your set based on your actual needs. Santoku knives are great chef knife stand-ins for veggie prep I used to work at a home supply store. 🙃

I’m not sure about MAC specifically, but when I was looking into this, the general consensus was that Japanese geometry on knives makes them more likely to chip if your technique isn’t good. For this reason, I added two Wüsthoff to our registry even though I liked the look and feel of the Japanese ones a lot more. I’ll work on my technique and at some point or another probably pick up a Japanese knife. In the meantime, I’d still like a couple well built knives that can hold and take an edge.

No knife will survive a lifetime with weekly sharpening. Sharpening removes material from the knife so their lifetime is limited. There are lots of knives in the $100 range that will last for years. I'm a fan of Wustoff knives because they are relatively inexpensive and sharpen up well. I'm not even an amateur cook/chef though, just a knife collector.

Advice on this will be all over the place because everyone cooks differently and has different external factors that guide the choices. Will you be the only one using this knife? If are the only one using the knives you may be able to get whatever you want stainless or carbon steel; however if not consider your spouse, child, visiting guest uses that knife and puts it in the sink or worse the dishwasher. This situation rules out carbon steel or pretty much anything with a non stabilized wooden handle as the water will rust carbon steel and or swell the wooden handle. Also something as simple as cutting an onion and not cleaning the blade afterwards could change the finish of certain steel blades. If it's just you, you can change your habits to accommodate carbon steel otherwise go with stainless. What are your current knife habits? Do you clean the knife between ingredients (carbon steel) or just cut things as needed (stainless steel)? After cooking, do you currently wipe your kitchen knives clean (carbon steel), wash them in the sink (stainless steel), or just throw them in the dishwasher (you shouldn't have a nice kitchen knife)? What sort of cutting board do you have? Bamboo and glass cutting boards will dull kitchen knives very quickly. Carbon steel will hold an edge better / longer than stainless steel but both will require a wooden or composite cutting board that won't dull the blade as quickly. How are you at sharpening? This is a can of worms itself. You can send the knives away to be sharpened professionally or look into getting your own sharpening stones as the knives will dull and require sharpening every couple months. If you're going to sharpen the knives yourself consider purchasing a knife where the bolster doesn't extend down to the heel of the knife (google to see what I mean) as this can get tricky to sharpen for people unfamiliar with the process. Once you decide on carbon steel or stainless the rest is up to you in terms of profile (western, Japanese), length (8" is pretty standard), weight etc... I own stainless knives because I have kids and they mostly throw (sometimes literally) the knives into the kitchen sink when they're done and leave them there. I have Victorinox and Wusthof 8" chef knives and paring knives and can say that the Wusthof is generally preferred by most everyone but the Victorinox holds an edge longer. Also my final grain of salt is to take a peek into the kitchen of restaurants when you get a chance. They mostly use inexpensive plastic handled knives and cut everything on plastic. Good luck.

Second this. Victorinox knives are universal in professional kitchens. They are nice enough to use and sharpen for years, but cheap enough to not stress out when someone borrows it. We also like Global and Wustoff. They're right at the $150 range. Globals are super sharp but more delicate due to the blade shape, so not ideal to use as a meat cleaver. NOTE: Global 2 piece set is $80 at Williams Sonoma right now! that's a deal!

Favorite/must haves in your home
I finally sprung for some quality kitchen knives from Wüsthof. I use them practically every day and wash/dry them immediately after each use. I’ve had my Viking pots/pans for about 5 years now and they still look brand new. Along with my knives, I’m using them 4-5 times a week. Hand wash and dry them in the rack after use is what I’ve done to keep them in great condition. You can usually find them at TJ Maxx for a pretty good deal! I’m a big fan of my Hotel Collection sheets. I’ve had them for about 5 years and rotate out 2 sets to keep them fresh.

I'm going to say Le Creuset cookware. You're young and you're likely to move several times in the coming years and it will be a bit of a pain so don't buy a whole set just one good dutch oven in a non trendy color. Also buy one good chef's knife. I like wusthof but there are several good brands.

My Dad’s one jacket that I routinely steal in the winter. It’s amazing in craftsmanship and being a warm jacket and I’m still salty the brand no longer exists. Probably the horn-carved spoon my grandparents brought back from Africa in the 90’s too. My dad’s Wusthof knives he got about 35 years ago. My grandma’s sewing machine I inherited. There’s probably more at my mom’s house that I don’t remember.

This is a defect of either the steel or the hardening process. Warranty it and it will be replaced. This cannot be caused by you without obvious damage creating it. Without being too too knife nerd on this: When you heat steel up to temper it you convert the structure of the steel into two structures: martensite and austenite. As it goes through heating, cooling, annealing, normalizing, the ratio of these structures shifts to hopefully ideal conditions for a knife that lasts for a long time. If there is a defect in the metal or a defect in any of these processes, it can create tiny stress fractures or voids that expand over time or with use. Knives are unique in this because they're such small pieces of steel. If you take a 2 inch thick slab of steel that's turned into a pasta die, except on the wear edge, the pressure or force put on most of the structure of that die is going to be small enough to never expose these issues. tl;dr - Warranty it. Get another. It shouldn't happen again.

Used to work at a little shop that sold them. They were really incredible about their warranty and didn’t make us jump through a ton of hoops. I basically had the customer fill out a repair ticket, stuck it to the knife and tossed it in a filing cabinet drawer. I’d then hand them a new knife if I had it in stock or order one if I didn’t. When my wusthof sales guy came by, I’d carefully empty the drawer of knives and he’d either hand me replacements or credit our account same day. They always threw in some free product for the shop’s time and made sure that everybody at the shop had some nice knives to use at home. Solid customer service all around.

Why is your knife so dark? It could just be a shadow, but this makes me think the knife has been exposed to a flame for whatever reason. And exposing a steel blade directly to a fire can greatly reduce the strength of the steel. No matter what though, wusthof had great customer support and they will likely just replace this.

To add on to this wonderful list, Wusthof makes knives with plastic handles now. The Gourmet line is just as high quality, just as well balanced, but MUCH more durable. If you are still training your loved ones NOT TO LEAVE KNIVES IN THE GOSH DARN SINK, the plastic handles will last much longer than the original wood. They don't look like plastic either, which is a plus. DON'T PUT THEM IS THE DISHWASHER. NO KNIVES IN THE DISHWASHER.

I have some Wusthof knives and a sharpener and I'll hopefully never need to replace them, as well as a Wagner cast iron pan we got from my wife's great grandmother. The pan will, under normal use and with even sloppy maintenance, outlast us both for generations. Wonderful piece of cookware to have in your kit, perfect for our household needs, the one we have holds enough food to satisfy both of us with some leftovers for the next day or for a guest or two to join us.

I can’t recall where, but I read that they use aluminum rivets so that they will corrode first if water gets trapped in the handle (between the plastic and the metal). I’ve had more issue with the plastic cracking, but I do feel the pits in the rivets. However my oldest Wusthof is 26 years old and the handle is in perfect shape. Luck of the draw?

I have problems with the rivets on my chefs knife. The river appears to be aluminum and started to corrode/pit and then the handle material developed a crack coming off that point. You can't really induce a crack like that without it being obvious. That knife has had a hard life, but that is a stress fracture. If you put your paring knife in a vise and beat on it til you induce one, it's pretty much impossible not to notice. I've been using my Wusthof Santoku for 20 years. I doubt I will outlast it tbh, but I also take really good care of my knives.

Recently got married myself. Some thoughts: Kitchen Stuff: - Le Creuset Dutch oven, frying pan, and anything else, really - Staub Dutch oven, honestly might be longer lasting than the Le Creuset. I own both and the Staub is much heavier duty. - Wüsthof chef knives, go for the Ikon Classic line, best feel and bang for buck. - Schott Zwiesel wine glasses, omfg buy these yourself if you must, the “Pure” collection is basically indestructible, have had multiple of them fall off of counters/coffee tables and miraculously not break. Also their DOF and other bar glasses are great. - Mannkitchen Pepper Cannon, my most-used kitchen tool, indestructible and absolutely BIFL - ThermoWorks, instant thermometer is a 10/10 VIGL product, also their RFX wireless thermometer if you like to grill or braise stuff for long cooks. - Stainless steel and teak wood utensils. All clad and Williams Sonoma make great stuff - Marcato Otello pasta roller machine, this thing will be the most legit vintage looking tool in your kitchen, will produce the best pasta you’ve ever had, will impress every guest, and make you look like an influencer on the socials Other Tools: - Leatherman multi-tool. I’ve had mine for a decade now. - Stihl products, chainsaw, leaf blowers, trimmers, etc - Weber products, grills mainly House: - get a head start on quality picture frames you will ultimately need for your wedding photos. People don’t think about this, but after the wedding you’re probably going to have to spend another thousand on prints and frames for the photos. - quality hardware like candelabras, etc - pretty plants that will last a lifetime, big monsteras, citrus trees, fancy orchids, etc.

Ah, so I can't speak to kikuichi personally (have heard good things). But there are reasons why I don't recommend Global/Shun/Henckels knives. * Shun used to have a serious problem with over-hardening the steel in their knives, leaving it quite brittle and prone to chipping and shattering. There was an infamous story where someone threw a Doritos chip in the air and took a swing at it with their Shun (silly, but sure, should be fine) and the chip knocked a chunk out of the blade. This makes me uncomfortable to suggest them as BIFL although some people love theirs. * I also think Shun is rather over-priced/over-marketed in terms of Japanese style chef knifes. MAC, Misono/Korin and the many smaller brands are probably better buys. * Global it's partly a matter of opinion. When I worked in restaurants (some years ago) a chef had a set of Global, and liked to let people try them. The stainless steel handles are *incredibly* slippery if you get anything on your hands to the point where I think it's dangerous. Their CROMOVA steel also doesn't seem to perform as well as the VG10, SG2 or other more premium steels in Japanese-style knives (or the alloy used in MAC knives). Some people love this brand as well, but I don't feel comfortable recommending it. * Henckels would be the direct competitor to Wusthof in German knives, but Wusthof tends to harden their steel more and takes a keener edge (without sacrificing durability). Some people like their Henckels knives, but I would tend to recommend Wusthof over them. There's a bunch of other knife brands out there which are probably good (and I just don't have enough to go on to recommend them). The ones I suggested are ones I've used personally for many years with good results, both at home and in professional kitchens. They're also quite popular picks in professional kitchens, especially Victorinox and Wusthof.

As others have said, don’t use bamboo or granite or glass cutting boards because they dull the blade. The best cutting board is edge or end grain hardwood. But I use a plastic cutting board for raw meats so I can throw it in the dishwasher. Just got to replace the plastic board after so many knife marks in it because bacteria can grow in the grooves.

What brand / type of pots & pans are worth investing in as a young adult?
I did something similar at age 30. I bought an All Clad D5 set at Macys for under $500 with a bunch of discounts. I actually wish I bought Demeyere instead to avoid the rivets. My knives are a mix of Henckel Pro for me and Wushof Ikon for Mrs (smaller handle). I also have a nice Japanese gyuto but don't love the handle for sustained use.

As always, get the individual knives you'll use instead of a set. Chef knife, paring knife, and serrated bread knife are my 3 reccomended shapes. I also really like using a Chinese cleaver. Victorinox is the go to budget brand, but there are others like mercer at that same price point. Zwilling and Wustof German knives are the next tier up Finally Japanese knives and beyond. Take care of your knives, don't dishwash them or leave them in the sink, don't use glass/stone cutting boards, and sharpen before they get dull.

1. Carhartt duck jacket. I’ve had mine 30+ years. It’s stained, faded, and frayed at the cuffs, but just as warm as the day I got it, only now with lots of memories. It got me through a series of physical, blue collar jobs during college and grad school and looks like it. It’s had regular use for decades and likely washed more than 60 times. I have no idea if the newer versions are as durable. 2. Any good set of USA made drill bits WITH a sharpening lesson from a machinist or a drill doctor. I’m a prolific DIYer and used to buy HF or Home Depot drill bits and sets, then throw them out when they got dull. A friend steered me straight a while ago and I’ve been using a couple old sets of USA made drill bits that I got off eBay for much less than a good quality set from HD for years. It’s a snap to resharpen again and again once you get the technique down, effectively making them last forever for most non-professional users like me. 3. A big box store Olympic barbell set with a simple squat rack. This is another item I’ve had for almost 30 years. I bought the set during college and set it up in my parent’s basement. It’s moved with me a few times and now my wife and kids use it regularly. The plates are rubber coated, which has prevented any rust from forming on the plates, so they look and work just like new. 4. Bonus: wusthoff knife set. They stand behind their products. We’ve had a set for 20 years and occasionally send them back for free repairs when the handles eventually break. For maybe $25/year a local sharpening service keeps them cutting as good or better than new. If they’re too expensive for your budget, find a cheap set at an estate sale and learn to sharpen them yourself or find someone local that can do it for you. Fail: Calphelon lifetime warranty pan set from Costco. I’ve been trying to get warranty repairs to those things on and off for a year (just for the principal). The company warranty portal is a piece of crap and Costco won’t allow me To return because the purchase was more than 5 years ago (this part doesn’t seem unreasonable).

Or maybe they're just bad at honing them? I've had my Wustoff Classic Ikon for going on 13 years now, use it almost everyday, hone it every other use and never had it professionally sharpened. It easily passes the paper test every time. Maybe it's the steel they use, maybe it's my honing technique if there is such a thing, whatever it is it's working.

If he’s into cars, you could get him an experience where he drives a fancy sports car around the track. A grill or smoker if he likes that sort of thing.

7 Feel is huge. My family is firmly divided into Henkles and Wustoff camps (with my husband as the weird Shun outlier but he's also the only Japanese person in my family) and it breaks down precisely amongst gender lines. The Wustoff handles are much smaller and since the women in my family have midget hands we all prefer them.

Using a honing steel before each use will help keep any knife sharp for longer. Basically, the thin, sharpened edge of the blade gets a little bent over or warped, and the hone ([Like so](http://atomictoasters.com/wp-content/gallery/sharpening101-7/wustof-honing-steel.png)) straightens out the little problems before they get totally crimped over and can only be remedied by removing metal.

Professional here, and Victornix are great cheap knives that hold up long term. If you really want to treat yourself though, I would get Wusthof. Don't bother with a set at all, giant waste of money. Get a nice chef knife that fits your hand properly, a paring knife that is comfy and a bread or utility knife depending on which you would use more. In my case its a bread knife, as I use it daily, where as a utility knife can be replaced with a chef knife if needed. That said for the average home user I would suggest Chef, Utility, Paring. If you want to go all out and really treat yourself though get all 4.

I think you've been jaded to japanese knives. There are plenty of phenomenal Japanese knives that are function over form and many japanese manufacturers make European style knives with Japanese steel. Its funny that you mention the pro chef and then obliterate japanese knives when almost every single pro chef I know uses Japanese knives. This is from line cooks to tsu chefs. I have actually found the opposite to be true on the price front as well. If you are buying a functional japanese knife and not a 'damascus' style one that is for show then I can usually find a similar quality knife to the german brands for much cheaper. Wusthof and Henkel are very well marketed and all of that marketing money increases the price. They are also good knives and I wouldn't discount them but they are far from the best in that price range. Hell, if you are going to go german then go Messermeister. They use a better alloy and a slightly better profile than either Wusthof or Henkel for the same money. Similarly with Japanese knives you shouldn't be going with Shun or Global if you want the best knife for the money because those are the household names with huge marketing machines. There are many other brands that offer better knives for better prices. While Japanese steel is harder and therefore more brittle than European steel you are over exaggerating how much extra care is necessary. You basically just can't throw the knife on the floor, put it in the dishwasher (also recommended for european knives), or bash it into things to avoid chipping or breaking the blade.

This comes up around here a lot. Here's something you should really think about. You can get a very high end knife(s), and it will be really nice and last a long time if you take good care of it. Seriously, some of those Shun knives come to mind, they are literally functional show pieces. You will hear a lot of people say names like Wusthof, Henckel, Shun, and these are super high quality knives. You pay for this quality not only with money, but time. You need to care of knives like this if you want them to last. You need to hand wash and dry them, you need to keep them in a nice block or on a mag strip. You probably want to invest in a good sharpening stone or be prepared to have them professionally sharpened sometimes. If you're up for this, then you can't go wrong with one of those knives. They are all awesome. On the other hand, if you expect to treat this new knife more like you treat the rest of your dishes, that is to say if you'd rather put your knife in the dishwasher, toss it in a drawer, and and sharpen it with a $10 sharpener you bought from Amazon, then you should NOT buy one of those. Instead, look for a knife that was *made* to withstand this kind of abuse. Get yourself a foodservice knife like the Victorinox Fibrox, or the Dexter-Russell Sani-Safe. They are really cheap, ultra-durable, dishwasher safe, and made to be used by people who hate their jobs. In a home setting they will last forever under circumstances that will be fatal to a high end knife. The down side is that they do not hold an edge quite as well (but not bad), they don't quite have the heft that some prefer, and they are not pieces of art worthy of display on your countertop. But they will last and perform well. That's all. Nothing wrong with a high end knife, but I hate spending extra time on taking care of gear when I don't have to. So think about that.

But it seems to me that Japanese knives are for collectors. People get off on the various shapes, steel used, the mystique of the manufacturer, and so on. That's all fetish stuff. That's not about knocking off two or three hours in the kitchen. You don't want some fussy, prissy knife where you're terrified of nicking the blade. I don't keep my knives in precious little presentation boxes and fawn over them. I *do* take care of my knives, but they are *tools.* Not that different from my bandsaw or milling machine. I take good care of those, too, but I don't preen over the milling machine and make sure it goes back into a decorative case after each use. If you enjoy that level of preciousness, well, I'm glad you enjoy it. There's really nothing wrong with it, but it is not necessary to cook well. The person eating your food will *never* know which knife you used and there isn't much advantage during prep, either. Which is why we use sturdy European knives. Wusthof, Henckels and F. Dick make fantastic knives that hold up for decades. They're not the cheapest, but comparatively, much cheaper than Japanese knives. $100 on a Wusthof would get you the functional equivalent of a $300 or $400 Japanese knife. Granted, the Wusthof will come in a cardboard and plastic case instead of a fancypants presentation case, but who cares? Well, if you're going to cook, that is. If you want to oooh and aaah over a knife with other collectors, then maybe you should pay three or four times as much for the pretty box.

Two Man J.A. Henckels are fantastic. Better quality then One Man Henckels knives. Consider them since you have such a large budget. Wustof are also good. Otherwise, Victoronix Chef knife should be around $45-50AUS. Consistently rated the best by America's Test Kitchen and we bought one for my mother-in-law recently, I thought about taking it for myself :-)

I would recommend Wusthoff's. They're full tang and they keep a good edge. My mother in law bought us a set for our wedding gift 15 years ago and they're all still going strong even though I'm ashamed to say I mistreat them. In hindsight I wouldn't bother with a full set though. I cook *a lot* and I literally only use the Butcher's knife and the paring knife.

This is a very good, all purpose chef's knife but it is very thin and light. That's one of the reasons ATK loves it so much (apart from it being made of extremely high quality steel for the price) but I find that this knife blows at heavy work like cutting through bone, smashing things, opening coconuts and winter gourds. If you don't plan on doing any of those things with it, it should meet your needs. I used one everyday for about 10 years before switching it out for a global and wusthof. I use the global vegetables , slicing, poultry etc. and I use the wusthof as a battle axe. I get each of them sharpened every 6 months or so and apart from a paring knife and kitchen shears, they are really the only knifes I ever need.

I started with an Oneida 8" chef's knife before moving on from there. Both my Calphalon and Wüsthof knives are solid, but between those two, the [Wüsthof](https://www.amazon.com/dp/B00005MEGC/ref=cm_sw_r_cp_awd_suTxwb0D9QJ8Q) is the one I could see using decades from now. It's a 10" knife and feels like an extension of my arm when using it. With regular honing and sharpening as well as cleaning it outside a dishwasher, I think that one will last a long, long time.
