I had Cuban neighbors growing up that made THE BEST espressos from these things. Cubanos, Americanos, Dulce Leche... I swear there are no better coffee makers than a cuban family breakfast.

The Brikka has a special pressure valve on the chimney that holds back the flow and lets a bit more pressure build up before it opens. This higher pressure and the narrowed outlet whip the coffee oils into that crema‑like layer on top. Regular moka pots don’t have this valve they just have a safety valve on the bottom chamber, so you normally get much less foam on top.
