I am a sustainability educator and finding things that last are a bit part of that. I’ve done quite a bit of research on possible options. Some of these I have (*) while others have been HIGHLY recommended to me. I would still check out the brand as some people who have had their (insert brand name item that they got 15 years ago here) have said that quality has diminished in recent years and won’t last as long. Good affordable knives
I love my Victorinox knives. I have Swiss classic chefs knife Swiss modern: Chefs Santoku Bread Scissors And plan to buy meat knives and cutlery soon. I'm missing a paring knife. These are probably BIFL without going full tilt. Use wood cutting boards to extend the life of your knives. Never wash them in the dishwasher.

Kitchen knife for personal use
Two Man J.A. Henckels are fantastic. Better quality then One Man Henckels knives. Consider them since you have such a large budget. Wustof are also good. Otherwise, Victoronix Chef knife should be around $45-50AUS. Consistently rated the best by America's Test Kitchen and we bought one for my mother-in-law recently, I thought about taking it for myself :-)
