Looking for a chefs knife
If only one knife, I'd suggest a Wüsthof either Cooks Knife (20cm) or Santoku Knife (17cm) and use a honing steel before very use. Use end-cut chopping board and "properly" sharpen it once or twice a year.

Bread Knife Recommendations?
I’m a knife nerd and have invested in Wusthof Ikon, Wusthof Classic, Global & Tojiro bread knives. I try to invests in the best I can afford cuz nothing like a good bread knife! But like the majority of bread knives, it is difficult to re-sharpen them at home. So I decided to design one myself specifically for sourdough bread. It’s 10” long, scalloped not serrated. I researched the spacing of the scallops to determine the perfect distance. Additionally, because of the scallops, I can resharpen when needed. But I won’t have to for a long time because we’ve made it extra sharp, +- 60 HRC. It’s very different than the typical straight bread knife, it has a slight curve to accommodate for knuckles 🤗 I tried really hard to get it just right. There’s more differences too but I don’t want to bore you. It definitely would make a beautiful gift for your wife or any one into bread! Knife set for Christmas
Back in 2017, which the market may definitely be different now, I bought an 11 piece set of Wusthof Classic knives for my wife for only 399 on eBay. They have been incredible knives and we get them sharpened as they need it. We definitely plan to keep them for pretty much the rest of our lives. My wife (who is the cooker) does use pretty much all the knives but she easily could have gotten away with fewer. I guess I just wanted to share what a deal I got on them looking back, and that potentially you could save some money looking on eBay for them.

What's the best BIFL item you own?
I have had the following for years if not decades, and have never regretted the price: All Clad pans, Vitamix, Portmeirion plates and ramekins (dishwasher, fridge, freezer and oven safe; they have literally been dropped on wood floors and been totally fine), Kyocera ceramic knives, Wüstof 10 inch chef's knife, Vollrath Wear-Ever Cookie Sheet Pans, Peugeot pepper mill (solid as a rock), Kitchenaid mixer, Hamilton Beach Heavy Duty food processor, Williams Sonoma gold pans, all metal apple slicer, all-metal juicer, all metal Microplane, metal bowl set, 10 piece glass bowl set, metal whisk, set of 3 plain wooden spoons, wooden cutting boards, all silicone spatulas (handle coated as well) Basically, if you find a kitchen tool that has no plastic anywhere, and is made of good quality metal, get it. Also refer to America's Test Kitchen recommendations, as they really put kitchen tools to the test. Also, I almost hate to say it, but my Tesla Model 3 has lasted 8 years now, and my only maintenance needed has been to replace the air filter, windshield washing fluid, and tires. Also, with every SW update, the car gets better/more features. Not buy for life, but buy for a decade at least. I may not stay with Tesla in the future, but I will be staying with electric cars, for the super low cost of maintenance and acceleration alone.

Suggest for my kitchenware?
Demeyere Atlantis is my favorite cookware. My favorite knives are Wusthof Classic. You really only need four kitchen knives. You need a chefs knife, a utility knife, a pairing knife and a bread knife. For stainless steel flatware JA Henckels International Lani 65 piece. For plates, bowls and dishes, I prefer square shapes. They seem to fit better, in my kitchen cabinets. I bought two four piece sets from Target. I think it cost somewhere around $100, for two sets.

Staub 5qt cocotte Rosle stainless steel utensils (made in Germany is best) I can’t pick a number 3… This year I bought Blundstone lug boots in black leather. I love them… And 2 pairs of darn tough socks. BEFORE I found this sub. Lol and I’m British! I’m so glad I found them. Another good pair is “SmartWool” Merino wool socks are very worth it. Same for Mattress topper… I invested in a WoolRoom topper. It’s amazing. Keeping me cool this summer and so comfortable. Maybe Boos maple chopping board and Wusthof classic 8” chef knife! I don’t often splurge but when I do I try my best to make it a buy it for a long time investment

IMHO a bit too long for everyday use, unless you are a giant. Better balance, more practical size, and far superior steel.
