Knife set for Christmas
I use wüsthof classic knives like for ever and they are amazing. Very charp and handy. And only need a resharp every 1-2 years for my Präferenz. But what I learned absolut myself I only need 2-3 knives. I really do all things with the 20cm chefs knives and sometimes using my 16cm santoku. And breadknive for bread for obvious reasons. But the 2 knives at the lower sided. I would not know why I need both.

Knife set for Christmas
Check out the demi bolster knives from Wüsthof. They are similar to classic but have a demi (half) bolster for easier sharpening. I’m very happy with the set if bought for my wife for our anniversary. I purchased at cutleryandmore.

Suggest for my kitchenware?
Demeyere Atlantis is my favorite cookware. My favorite knives are Wusthof Classic. You really only need four kitchen knives. You need a chefs knife, a utility knife, a pairing knife and a bread knife. For stainless steel flatware JA Henckels International Lani 65 piece. For plates, bowls and dishes, I prefer square shapes. They seem to fit better, in my kitchen cabinets. I bought two four piece sets from Target. I think it cost somewhere around $100, for two sets.

Piggy backing this- Weight is a big consideration! German knives like Wusthof tend to run heavier than Asian knives. A lot of brands also have different lines amongst themselves like Wusthof Gourmet: budget line, stamped knife, traditional knife handle but cheaper construction (less metal used in construction) Wusthof Classic : mid tier line, forged (not stamped) traditional knife handle with more substantial construction (more metal) Wusthof Ikon: premium line, forged, ergonomic style handle with great construction. Depending on your food prep experience, you probably have a preference for what you like to handle, you won't know unless you try to handle the knives. I thought a japanese knife would be great, but I have a greater learning curve using a lighter knife since I'm used to using heavier German knives. Also, you might prefer a smaller chef's knife if you find that the standard 8 inch doesnt cut it. Some brands will carry a 7 inch chefs You do not need a whole knife set, a chefs knife, bread knife and paring knife will take you a long way. Build your set based on your actual needs. Santoku knives are great chef knife stand-ins for veggie prep I used to work at a home supply store. 🙃
