Knife set for Christmas
I went on a similar journey a couple years back. I ended up going with a Wusthof (I believe the same chef knife as in your picture) and I've been happy with it. I didn't end up getting a set as I still had other knives I could use and don't really even use those much to be honest, except for the pairing knife. The one thing I will say is that a knife can be relatively personal so instead of "forcing" your husband into a particular set, you could consider getting him a gift card to a kitchen/knife shop and letting him try things out. The balance, weight, size, feel, style and steel used are all factors to be considered when choosing a good knife, and is chef dependent, especially if you plan on it being BIFL. So unless your husband truly knows what he wants already, you could consider get a gift card and make a date/adventure of it so he can try the knives out and ask questions of the staff (and perhaps pick up other things you might need for your newly renovated kitchen!) I'm in Vancouver and I got my Wusthof from Gourmet Warehouse. The lady I spoke with was wonderful in helping me make my decision. The other knives I tried were Global, Shun, and even some Santoku ones but I've been quite happy with my Wusthof Classic Chef's knife. Good luck on the journey!

How does he sharpen his knives? That's important to know, as a fancy knife with shitty sharpening isn't worth it. Most Western knives are 20 degree blades, and most Japanese and some others are 15. I believe the Wustoff Classic Chef's knife is 14 degrees. Also, it's really important to know if he wants a 10 or 8 inch chef's knife (or other size). I second the comments saying to buy 1 really good chef's knife, and a Victorinox Fibrox bread knife and paring knife. And, find a place for a magnetic strip; 3M VHB Double-sided tape would hold it up on your quartzite back splash, since I'm sure you don't want to drill (and you can remove it cleanly when wanted).

Wüsthof make solid knives but they are overpriced in NA. For reference, I can buy the same set n Europe for just under 400USD or 552 CAD after tax. I recommend you don't buy a set but single knives and only add tomtze collection when you feel the need. Mist people never end up with a full set tat way and save money in the long run. Doing that will also improve your knife skills since you will get used to just using the one. So in my opinion start with a chef knife. A decent one shouldn't cost much over 120 CAD. Zwilling Pro or Wüsthof classic are both excellent choices. Also, nobody really likes knife blocks, I hear you. Mounting a magnetic strip solves that problem. Good luck with the knife hunt!

What’s a purchase that’s not fun, not flashy but now you swear by it?
Great question. A few answers - 1) Briggs and Riley carry-on. Got it in 2002 and the thing is bullet proof. Use it whenever I travel. Has a garment bag and can expand if needed. 2) Ariens snowblower. Bought it in 2000 and the thing is awesome. Still going strong 25 years later with regular maintenance. All steel not like the ones with a lot of plastic today. 3) Wustoff classic knife set. Got it as a Wedding gift in 1997. Still my wife’s favorite knives. 4) All-clad stainless steel set.ditto to #3. Love it.

If you had to choose one item to truly buy it for life what would it be and why?
To be specific on the chef's knife, I would feel pretty decent about using a Wusthof Classic, Victorinox Fibrox, or Tojiro for the rest of my life. Just set me up with something around 8" for a chef knife, give me something around 4-5" for a paring/petty knife, and then something like a 10" bread knife, and I'm good to go. Or if I truly only get one knife, give me a CCK vegetable cleaver. You'd be surprised what you can make happen with a good Chinese sangdao cleaver.

Suggest for my kitchenware?
Demeyere Atlantis is my favorite cookware. My favorite knives are Wusthof Classic. You really only need four kitchen knives. You need a chefs knife, a utility knife, a pairing knife and a bread knife. For stainless steel flatware JA Henckels International Lani 65 piece. For plates, bowls and dishes, I prefer square shapes. They seem to fit better, in my kitchen cabinets. I bought two four piece sets from Target. I think it cost somewhere around $100, for two sets.

Countdown Style 3) Wusthof Classic Knives (17 years -- all but one good as new -- one that isn't was dropped perfectly wrong and is bent) 2) Briggs and Riley 2 Wheel Domestic Roller (My oldest 2 wheeler is 19 years old, only needed one repair, flies with me for almost all of my domestic travel, I have a smaller newer Briggs that I use for international). 1) F Hamman / Eschenburg Manicure Kit -- still going strong 20+ years since I got it as a gift -- would be devastated if i lost it.
