BIFL Table Knives? Something that isn’t huge (looking at you Benchmade table knives) and holds an edge (good steel).
I like Wusthof and Zwilling. I prefer the latter because their Pro line does not have bolsters which makes them easier to hone/sharpen. There are far cheaper ways to get a lifetime worthy set of steak knives, just my preference.

Knife set for Christmas
Wüsthof make solid knives but they are overpriced in NA. For reference, I can buy the same set n Europe for just under 400USD or 552 CAD after tax. I recommend you don't buy a set but single knives and only add tomtze collection when you feel the need. Mist people never end up with a full set tat way and save money in the long run. Doing that will also improve your knife skills since you will get used to just using the one. So in my opinion start with a chef knife. A decent one shouldn't cost much over 120 CAD. Zwilling Pro or Wüsthof classic are both excellent choices. Also, nobody really likes knife blocks, I hear you. Mounting a magnetic strip solves that problem. Good luck with the knife hunt!

Head on over to r/chefknives. Personally, I have a Zwilling Pro set. Only had it a few years so far but I can’t see it failing anytime soon.

What’s a kitchen item you bought once and never had to replace?
My Staub and Le Creuset, Staub is superior but both last. Also my Zwilling Pro chefs knives and santoku. My decades old Italian made Farberware manual can opener.
