What’s the BIFL item that you love but everyone around you thinks is ridiculous?
I am really liking the Misen Nitrided Carbon Steel. They call it “carbon nonstick”.

I need new induction cookware I won’t have to throw away in two years.
You can get the essential cookware BIFL for under $500. Lodge 6qt or 7.5qt enameled cast iron Dutch oven. I’d go bigger if you make more soups/stews and smaller if you’re mostly cooking for 2 or like baking bread. This doubles as your stock pot. $100 - $120. - go with Staub or Le Creuset if money is no object. Lodge 12” cast iron skillet $40. - Antiques are better if you can find one. You’ll cook most of your meats in here. You could theoretically stop here. But, you’ll probably want some smaller, lighter, easier to use pots and pans. All-Clad D3 3qt stainless steel saucepan with lid $150. - Just a staple of every kitchen and will last for generations. I don’t think you can damage this if you try. Maybe if you left severely burned caramel stuck to the bottom. But even that could probably be fixed. Misen Carbon nonstick (nitrided) 10” fry pan $120 - Easier to use and less maintenance than regular carbon steel or cast iron. Perfect BIFL alternative to teflon or ceramic nonstick. Can you make eggs in cast iron? Sure. But, this pan will make eggs way easier.

If you're looking for a good non-stick that is likely to last, I just got a misen carbon non-stick pan and it's so unbelievably good. I can't believe how non-stick it is, like better than any Teflon or ceramic pan I've ever used. It's not a coating like Teflon so it won't come off. You don't have to baby it and can use metal utensils on it and stuff. I can't say enough good things about it. I've only had it about 2 months so can't speak to longevity but the carbon steel surface should in theory make it the longest lasting non-stick pan.

Try the new Misen Carbon Nonstick. Nitriding coating are ultra hard. It's not going to be eggs slide on a dry pan slippy, but everything I have seen about them shows extreme longevity and durability compared to normal nonstick.

Misen Carbon Nonstick. Nitride coated carbon steel with aluminum core. It starts it's life non stick as continues as the seasoning builds like normal carbon steel. Recently got my Kickstarter for a 10" and 12" and it's mind boggling.

and just to answer your question i use MISEN 5ply stainless steel cookware and theyre amazing, highly recommend but it takes some getting used to, the teflon pans are easy to use, SS takes a bit of practice so expect the beginning to be a little painful but youll get the hang of it.
